The smell….and refreshing taste of this is to die for. It’s delicious. I was working with a chocolate recipe, and after all is said and done this one turned out better. Who knew some carrot orange would beat chocolate? Enjoy this one…

  1. Grease up your favourite bundt pan. Dust it with some flour and set aside. Preheat the oven to 325 degrees F.
  2. In a large bowl, beat together the butter and sugar until fluffy.
  3. One at a time, add the eggs, beating well.
  4. Beat in the orange rind and the vanilla.
  5. In a smaller bowl, whisk together the flour, baking powder, baking soda and salt. Slowly add half of this to the butter mixture.
  6. Add half the sour cream. Add the rest of the dry mixture. Now the rest of the sour cream.
  7. Fold in carrots. Pour your batter into the prepared baking pan.
  8. Bake at 325 degrees for about an hour, or until toothpick comes out clean.
  9. Let cool completely before serving.

  1. In a pot, heat 3 tbsp of orange juice.
  2. Add 1 cup icing sugar and mix well.
  3. Pour over cake. Garnish with white chocolate curls and more orange zest!
