  1. Cook the quinoa in the veggie broth
  2. Preheat oven to 350 degrees F. Grease a mini muffin tin
  3. Mix all the ingredients until well combined. Scoop small tablespoons and place in each muffin tin
  4. Top with more cheese and place in oven to bake for 15-20 minutes (or until cheese is fully melted)
