My fav! I love this recipe. Clean easy bake. Dairy free and no added sugar!  Enjoy this as a healthy snack, a perfect compliment to your morning coffee or in a basket as a side with soup. It’s good with anything, anywhere.

  1. Preheat oven 350 degrees F and grease a muffin tin.
  2. Dice strawberries and place them on baking sheet.
  3. Roast the strawberries for 20 minutes.
  4. Mix corn meal, almond meal, baking powder in a large bowl.
  5. Add the rest of the ingredients to the large bowl and mix well.
  6. Fold in strawberries. Pour mixture into prepared muffin tins.
  7. Bake 25 minutes or until edges are golden.
  8. Remove from oven, allow to cool and enjoy!

Makes 18 mini muffins.
