There’s nothing better than an awesome neighbour. It’s so convenient that they live close for the little things (like milk at a late hour), kids stuff, and all the other good things in life. But the best thing is when they leave a delicious salad bowl on the fence, and it’s one of the best salads you’ve ever had. Crunchy, spicy & nutritious. As much as I wish I could take credit for this recipe, I can’t. It’s my lovely neighbour’s (one of my fave people on earth).

Healthy, green & simply delicious. Let’s talk about Kale. Yes I write it with a capital K cause this food is so good for you it deserves it. All hail the mighty kale!

Kale is a member of the cabbage family. It’s cousins include broccoli, sprouts, cauliflower and more. In just ONE cup of kale you’ll find…ONLY 33 calories, 2.5 grams of fibre, 3 grams protein, Vitamins A, B (folate) Omega 3 fatty acid, C & K. WOW! Now go and make this salad…

  1. In a bowl, whisk together egg yolk, salt, pepper and garlic.
  2. Add olive oil, red wine vinegar, lemon juice, hot sauce and Worcestershire sauce. Mix well.
  3. In a salad bowl, drizzle this dressing over the kale.
  4. Top with fresh parmesan, croutons and hemp seeds.
  5. Toss and serve!
