The smell….and refreshing taste of this is to die for. It’s delicious. I was working with a chocolate recipe, and after all is said and done this one turned out better. Who knew some carrot orange would beat chocolate? Enjoy this one…

0/0 steps made- Grease up your favourite bundt pan. Dust it with some flour and set aside. Preheat the oven to 325 degrees F.
- In a large bowl, beat together the butter and sugar until fluffy.
- One at a time, add the eggs, beating well.
- Beat in the orange rind and the vanilla.
- In a smaller bowl, whisk together the flour, baking powder, baking soda and salt. Slowly add half of this to the butter mixture.
- Add half the sour cream. Add the rest of the dry mixture. Now the rest of the sour cream.
- Fold in carrots. Pour your batter into the prepared baking pan.
- Bake at 325 degrees for about an hour, or until toothpick comes out clean.
- Let cool completely before serving.

- Add 1 cup icing sugar and mix well.
- Pour over cake. Garnish with white chocolate curls and more orange zest!
